Pasta with Mushrooms

Pasta con Funghi

This has to be one of easiest pasta dishes to make…just pick up some mixed mushrooms from your greengrocer and most other items you will have in the fridge or pantry already. You can use any pasta for this dish - either short like farfalle, penne , zitti, or long like fettucini or ribbons.

Recipe

Serves 4 to 6

Ingredients

500g of your choice of pasta

400g of mixed mushrooms (like swiss brown, portobello, oyster, slippery jacks)

3 tablespoons of butter

1 clove of garlic - grated or minced

300 mL of pouring cream (either light or full fat, depending on how you feel)

1/2 cup of chopped parsley

Dried chilli flakes

Salt and pepper

Parmigianno cheese

Method

  1. Put the pasta into salted boiling water and cook until al dente

  2. While waiting for the pasta to boil, gently sauté the mushrooms with the butter in a frying pan and add the garlic

  3. After 5 minutes, add the cream and gently heat through. Add the fresh chopped parsley, a pinch of chilli flakes, salt and pepper to taste

  4. Drain the pasta, saving a little of the water.

  5. Mix with all of the mushroom sauce and the saved pasta water

  6. Dish the pasta onto plates and top with freshly grated parmigiano cheese

  7. Eat and enjoy!
