Risotto Balls

*** See my Mushroom Risotto Recipe in order to make the rice balls ***

  1. Take the leftover risotto cooked the night before, add 1 beaten egg and I cup of breadcrumbs

  2. Mix with your hands and form into balls or oval shapes

  3. Shallow fry until golden and sprinkle with more parmesan cheese. Its that easy!

These risotto balls are a great antipasti idea to serve as some pre-dinner snacks.
