Seafood Skewers Italian style

When the weather gets too hot and you feel like some thing light and yummy try these prawn and fish skewers with a light summer salad of oranges and radicchio. You can use any type of seafood you like including scallops and octopus but I like to keep it simple with prawns and blue eye cod or trevalla fillets. This dish is so easy to make when its too hot to be bothered.

Ingredients for Skewers

400g firm white fish fillets (cut into approx. 3 x 3cm cubes)

16 large green king prawns (peeled and deveined)

100g pancetta slices

1 tablespoon chopped fresh rosemary

2 tablespoons chopped fresh parsley

1 lemon rind grated

1 garlic clove grated

Pinch of dried chilli (to taste)

Salt and pepper

Olive oil

Tomato salad

4 ripe tomatoes chopped into 2 cm pieces and salted

1 cup basil leaves

4 slices sourdough bread (toasted)

Pinch of dried oregano

Dash of balsamic vinegar

Olive oil

Method

1.       Put the chopped fish and prawns in a bowl and add remaining ingredients (except pancetta) and mix well.

2.       Skewer fish, prawns and pancetta onto metal or wooden skewers that have been soaked in water.

3.       BBQ or cook over a hot griddle pan for approx. 10 minutes

4.       While skewers are cooking quickly make the tomato and bread salad by mixing the ingredients in a bowl

5.       Serve skewers with the tomato salad along with a radicchio salad with oranges and other crispy additions such as fennel, apple or baby carrots for freshness

Very refreshing and satisfying on a hot summer’s day or evening
