Rice Stuffed Chicken

Recipe

Serves a hungry family of 4

Ingredients

Leftover mushroom risotto

1 egg

1 cup of breadcrumbs

1 lemon

1 1/2 cups of parsley, chopped

1 good organic or free range chicken (Extra drumsticks if you like)

Olive oil

Method

  1. Take the leftover risotto from the mushroom recipe and add 1 beaten egg, breadcrumbs, grated lemon rind and 1/2 a cup of chopped parsley

  2. Now stuff as much as you can into the cavity of a washed and dried chicken

    I like to cook one whole chicken and then some extra legs as my family like the drumsticks, but there should be enough rice to stuff 2 birds if needed.

  3. Any excess rice can be formed into balls and baked with the chicken

  4. Drizzle the chicken with olive oil and chopped parsley and cook for 1 and half hours then rest.

    This really is a wonderful way to use leftover risotto and turn the humble chook into something superb!
